The opening salvo of the inaugural AVAtrix is a shotgun blast of cherries, mulberries, caramel and cedar. Layered into that energetic mix are hints of hibiscus, potpourri and crushed stone. The palate of the wine is hyper-focused and filled with coursing acidity that delivers lip-smacking freshness and long lingering strawberry and cranberry notes. The density and firm structure of AVAtrix combine with notes of vanilla and pipe tobacco to provide a smooth, driven, tantalizing finish that will keep you yearning for more. Heart Hill Vineyard
Heart Hill Vineyard, Paso Robles. Harvest Period: All grapes for AVAtrix were harvested on September 18th, 2014 and September 29th, 2014.
Fermented in 1-ton open top tanks following a five-day cold soak. Lots were punched-down by hand 2-3 times per day and were pressed off the skins after a total of 18-21 days of skin contact time. Aging: 19 months post fermentation in a mixture of French oak puncheons and barriques (~15% new oak).
