For those who can’t make the trip to Paso Robles for our Chef’s Table Series at Briarwood Cottage, our plan for 2020 is to bring them to you! We are excited to announce that our first On the Road: Chef’s Table Series event is hosted at the highly-acclaimed République in the heart of Melrose, Los Angeles. We hope our Los Angeles locals can join us for this intimate evening on Saturday, April 4th at 6pm. Seating is limited and expected to sell out.
About République and Chefs, Walter & Margarita Manzke
République opened its doors in 2014, thanks to the dynamic wife & husband duo, Margarita & Walter Manzke. Chef Margarita was born and raised in the Philippines and grew up working in her family’s restaurant just outside of Manila. She went on to receive degrees from Le Cordon Bleu in London and the Culinary Institute of America in New York, afterward moving to Los Angeles. Chef Margarita has worked beside highly-ranked chefs such as Joachin Splichal at Patina, Wolfgang Puck at Spago, and Josiah Citrin at the two Michelin starred Mélisse. In 2007, she re-opened Bastide Restaurant as Pastry Chef, where she received a 3-star review from the Los Angeles Times. In 2014, along with her husband, Chef Walter, they opened République. Chef Margarita was nominated in 2017, 2018, and 2019 for Outstanding Pastry Chef from the James Beard Awards and released her first cookbook, Baking at République, in April 2019.
Chef Walter was born and raised in San Diego and began his relationship with food early on with the fresh produce that his family grew in their backyard. His passion for the culinary world led him to Patina, where he gained critical acclaim working alongside Joachin Splichal for nearly a decade. From there, he went on to work in five separate, three Michelin-star kitchens around the world. He’s worked alongside Chef Ferran Adria, Chef Thomas Keller, and Chef Alain Ducasse. In 2009, Chef Walter took over the kitchen at Church & State, earning rave reviews for his interpretation of French cuisine. December 2019 marked République’s five year anniversary in business.
The remarkable cuisine isn’t the only reason people dine at République, the atmosphere is another level of special. The building itself was built in 1928 by Charlie Chaplin as an office space and eventually purchased by Larry Silverton, where chefs Nancy Silverton, Mark Peel, and Manfred Krankl would found Campanile. The history and elegance of this building are not lost on Chef Walters and Chef Margarita. “I have such profound respect for the building...people want to be here. Nothing else I know of has the energy of this space,” Chef Walters said.
